Hummus with vegetables

What you will need:

  • 1 16 ounce can of chickpeas
  • 2-3 garlic cloves
  • 5 tablespoons of lemon juice
  • 1/4 cup of water
  • 1/2 tablespoon of olive oil
  • 1 tablespoon of tahini sauce
  • Salt to taste
  • Paprika, cumin seeds, spring onions, onions, tomatoes, parsley to garnish.




Method:

  • Open can and pour chickpeas in a strainer and rinse to get rid of preserved liquid.
  • In a food processor or blender mix garlic and chickpeas. Add water as needed.
  • Add tahini, lemon juice and salt and blend until all ingredients have combined to create a smooth mixture.
  • Pour into a bowl and drizzle olive oil on top and garnish with various veggies.
  • Serve with pita chips or toasted pita or bread.

Cheesy Biscuits

Prep Time: 10 min
Bake Time: 15 min

CIVS_cheesy-biscuitWhat you will need:
2 cups of all purpose flour
1 cup of grated cheese
5 tablespoons butter, cut into little pieces
1 cup milk
2 tablespoons butter, melted
1/2 teaspoon salt
1/2 teaspoon baking powder
3 gloves garlic, minced
rosemary, oregano, crushed red pepper flakes to taste



Method:
Preheat oven to 350ยบ
In a mixing bowl mix flour, 5 tablespoons of butter, milk, salt and baking powder until dough forms.
break into small small scoop size pieces on a baking tray
Add cheese on top and put tray into oven
Bake for about 15 minutes or until golden brown.
Mix melted butter, Rosemary leaves, oregano, crushed red pepper flakes and minced garlic in bowl.
Brush melted butter mix on top of baked biscuits and serve immediately.

Asparagus in Buttersauce

A light, flavorful and yummy side!

What you will need:

  • A bunch of fresh asparagus
  • 1/4 cup butter
  • 2-3 cloves of garlic, minced.
  • 1/2 chili pepper, finely chopped
  • 1/4 onion, finely chopped
  • crushed pepper flakes and salt to taste
  • 2 tablespoons of milk


Method:

  • Wash and cut asparagus into 2 or 3 parts and put in the microwave for 40 seconds
  • In a pan melt butter and add garlic, chili pepper and onions and stir fry
  • Add salt, pepper, and crushed pepper flakes and stir.
  • Add 2 tablespoons of milk and let it heat up
  • Add the asparagus to the pan until tender and serve immediately!

Tostada Pizza

Prep Time: 20 minutes
Cook Time: 10 minutes

What you will need:

  • Readymade pizza crust, or make your own
  • 1 can of kidney or black beans
  • 1 bottle of salsa
  • 2 onions, chopped
  • 2 tomatoes, chopped
  • 1 bunch of spring onions, chopped
  • 1 lettuce, shredded
  • 1/2 green chili pepper, chopped
  • 1 pack of grated cheese, Mexican blend
  • 2 tablespoons of oil
  • salt to taste
  • 2 tablespoons of taco seasoning
  • sour cream or ranch dressing
  • tortilla strips


Method:

  • In a pan heat the oil and add 1 onion, 1 tomato, 1/2 chili pepper and cook for 2 minutes
  • Rinse and mash the kidney beans and add to the pan
  • Add taco seasoning, salt and 2 tablespoons of salsa and let it cook for a few minutes.
  • Put the pre-made crust on a pizza baking tray or roll out the crust on the tray.
  • Preheat the oven to the maximum temperature (broil)
  • Add the beans mixture on top of the crust and add cheese. Bake in the oven for about 10 minutes until the crust is golden brown and the cheese has melted.
  • Top with tomatoes, chopped onions, green onions, and lettuce.
  • Add sour cream or ranch dressing on top with fried tortilla strips and serve immediately.

Veggie Enchiladas!


Prep Time: 10 min
Cook Time: 20-25 min

What you will need:

  • 1 can of black or kidney beans, mashed
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 pepper, chopped
  • 2 tablespoons of taco seasoning
  • Salt to taste
  • 1 tablespoon oil
  • Grated cheese as desired
  • 3 tortilla wraps
  • 1 can of tomato sauce


Method:

  • In a pan add the oil and once it heats up add onions and peppers and cook for a minute.
  • Add the mashed kidney beans and mix.
  • Add tomatoes, salt and taco seasoning and let it heat up and turn stove off.
  • In a baking dish pour half the can of tomato sauce and set aside.
  • Take the flour tortilla and add the kidney bean mix and make a roll. Do this for all 3 wraps and cut them in half for easy serving.
  • Place them in the baking tray on top of the sauce in neat rows. 
  • Add the remainder of the sauce on top and add cheese.
  • Bake in the oven (350°) for 20 minutes or until the cheese has melted.
  • Add baby tomatoes or jalapenos on top for an extra kick.
  • Serve with a salad on the side or sour cream and salsa.

Vegetable Fried Rice


Prep Time: 10 minutes
Cook Time: 6-8 minutes

What you will need:

  • 1.5 cups of rice (white or brown)
  • 1/4 cup olive oil
  • 2-3 cloves of garlic, minced
  • 1 onion
  • 1 tablespoon of ginger, minced
  • 1 cup  green peas
  • 1 cup chopped carrots
  • 1 bell pepper, chopped
  • 1 tomato, chopped
  • 1 cup broccoli, cut into small pieces
  • 1/2 chili pepper, chopped
  • 1 tablespoon soy sauce
  • salt, hot sauce and chili flakes to taste



Method:

  • Cook rice (steam or boil)
  • In a wok or pan add olive oil and let it heat up.
  • Add garlic, ginger and chili pepper and let it cook for a minute
  • Add onions, carrots and bell pepper to the pan and let it cook for another minute.
  • Finally add broccoli, peas and tomatoes to the pan.
  • Add salt, soy sauce, chili pepper flakes and stir for 2 minutes.
  • Add rice to the pan and mix all the ingredients together until rice is hot. Serve immediately!

Veggie Lo mein

Lots of colorful veggies with the right flavors!

Prep Time: 10 min

Cook Time: 8-10 min

What you will need:
  • 1 pack of Lo Mein Noodles or Spaghetti
  • 1/2 cup of olive oil
  • 3-4 carrots - grated
  • 1 red bell pepper
  • 1/2 chili pepper - chopped
  • 1 onion sliced
  • 2-3 cloves of garlic - minced
  • 1 cup of bean sprouts
  • 2 tablespoons of soy sauce
  • 1 teaspoon of ginger - minced
  • 1 tomato - chopped
  • 1 tablespoon of hot sauce
  • Salt, crushed pepper flakes, dried basil leaves.
  • Can also add - mushrooms, green onions or tofu.

Method:
  • Heat 1/4 cup oil in a wok or saute pan and stir fry onion, pepper, chili and ginger until tender. 
  • Then add carrots and other choice of vegetables. 
  • Add salt, crushed pepper flakes, dried basil, hot sauce and tomatoes and let it slowly cook.
  • In another pot boil water and add salt and oil. 
  • Add noodles to boiling water for 1-2 minutes until al dente and drain.
  • Add the noodles to the saute pan with the vegetables and add the remainder of the olive oil and soy sauce.
  • Add bean sprouts and toss everything together and serve immediately!
