Cook Time: 8-10 minutes
What you will need:
- 4-5 ripe tomatoes
- 4 cloves of garlic
- 2-3 cups of spinach
- 1 onion
- 1 pepper
- 2 tbsp of olive oil
- 1 cup of shredded mozzarella cheese
- Salt, crushed pepper flakes, oregano, ketchup or hot sauce to taste
- 1 baguette of sourdough or Italian bread sliced
Method:
- Finely chop tomatoes, garlic, spinach, onion and pepper and put in a bowl.
- Add salt, crushed pepper flakes, oregano and olive oil to the bowl and mix.
- Take your choice of bread and place the topping mixture from the bowl on top.
- Use a spoon to evenly distribute the mix on about 8 sliced pieces of bread.
- Add grated cheese on top as you would to a pizza and put in the oven (250°F) for about 8-10 minutes until the cheese has melted and the sides of the bread are golden brown.
- drizzle some ketchup or hot sauce and serve hot!
