Bruschetta!

A healthy, light, colorful, and fun snack with a twist! 

Prep Time: 15 minutes
Cook Time: 8-10 minutes

What you will need:
    CIVS_bruschetta
  • 4-5 ripe tomatoes
  • 4 cloves of garlic
  • 2-3 cups of spinach
  • 1 onion
  • 1 pepper
  • 2 tbsp of olive oil
  • 1 cup of shredded mozzarella cheese
  • Salt, crushed pepper flakes, oregano, ketchup or hot sauce to taste
  • 1 baguette of sourdough or Italian bread sliced



Method:
  • Finely chop tomatoes, garlic, spinach, onion and pepper and put in a bowl.
  • Add salt, crushed pepper flakes, oregano and olive oil to the bowl and mix.
  • Take your choice of bread and place the topping mixture from the bowl on top. 
  • Use a spoon to evenly distribute the mix on about 8 sliced pieces of bread.
  • Add grated cheese on top as you would to a pizza and put in the oven (250°F) for about 8-10 minutes until the cheese has melted and the sides of the bread are golden brown.
  • drizzle some ketchup or hot sauce and serve hot!
